Festive Mince Pies!
Ingredients...
❄ 1 jar of mince meat
❄ Cranberries
❄ 1 packet of filo pastry
❄ 1 packet of puff pastry
❄ 2 table spoons of butter
❄ A dusting of icing sugar
❄ A dusting of flour
Equipment...
❄ 1 baking tray (preferably with 12 spaces)
❄ A couple of bowls
❄ A sift
❄ A pastry brush
❄ A knife and a spoon
❄ A rolling pin
Method...
❄ First you will need to preheat your oven to 200 or gas mark 5
❄ Next, dust your clean surface with flour and dust your rolling pin too
❄ Then roll out your pastry into a rectangle until it is about a pound coin thickness
❄ When this is done, spoon on your mince meat and spread evenly (Top Tip: leave a gap between the mince meat and each of the longer edges or it will all spill out and make a massive mess!)
❄ Cut your cranberries in half if they are quite large or leave them if they are small
❄ Sprinkle these evenly onto of your mince meat and then roll up your pastry!
❄ Depending on how big your tray is, cut the roll into equal segments - enough to fill all the spaces and put this to one side
❄ Melt your butter in the microwave for ten seconds
❄ Spread this onto your baking tray until covered
❄ Add two layers of filo pastry onto the baking tray - covering it completely - adding more butter to stick the layers together and a coating on top
❄ take your rolls of pastry and filling and place each of these in the gaps and place in the oven
These take around 15 - 20 minutes depending on your oven but keep checking and take them out when they are golden and crispy
❄ You will want to cut these out and place them somewhere to cool when they are still moderately warm so they don stick in the tray.
❄ Once cooled, dust with icing sugar and enjoy!
I didn't wait until they were cool and they were delicious just warm!
